Pumpkin Hummus

I love Halloween! Scary stories, spooky food and crazy concoctions, it’s what it’s all about. And obviously, who doesn’t love free sweets and dressing up?

If I’m honest, our house is full of strange potions… Got a cold? We have a remedy for that. Got a sore back? Mum has some weird ass gel that’s full of different oils that will knock you right back into shape. And don’t get me started about the concoctions I’m whipping up in the kitchen. There’s been a marble cake recipe I’ve been working on for a few weeks with one of them resembling brown coloured mush. Trust me though, when I share the final recipe, you’ll LOVE it!

More about that on another date, as it’s Halloween I wanted to share with you my Pumpkin Hummus recipe. It’s so good and Adam even says it’s better than normal hummus. Got to be onto a winner right? Find the recipe below and let me know if you try it out!

INGREDIENTS

1 tin Chickpeas
200g Pumpkin Puree
2tbsp Tahini
1 clove Garlic
1 Lemon, juiced
1½tbsp Extra Virgin Olive Oil
½tsp Salt
½tsp Paprika
A dash Water, if needed
To serve Crispy Tortilla Chips

METHOD

  1. Place all the ingredients, except the tortilla chips, into a food processor and blend until smooth and creamy.
  2. Add more oil or water if too thick and adjust seasoning to suit.
  3. To make the tortilla chips, brush tortillas with oil, cut into triangles and place into a warm oven (180 degrees) for 5 minutes until crisp.
  4. Serve all together for a spooktacular Halloween
